Healthy Option! Chocolate, Banana lower in fat and calories Muffins or Loaf

In my quest to make and share with you some healthy options with your ordinary muffin I changed a few ingredients in my original banana muffin recipe to come up with this easy and very tasty breakfast or anytime muffin.





Here is my new version:  Hope you try it and give me your opinion!

1 3/4 cups all purpose flour
1/2 cup sugar
5. 3 oz. serving size vanilla yogurt (fat free or Greek)
3.9 oz. serving size natural applesauce
1/2 tsp. baking soda
4 T Hershey's cocoa
1/4 tsp. salt
2 tsp. baking powder
2 eggs
1 cup mashed bananas
1/4 cup mini white chocolate morsels (sprinkle on top) optional
1/4 cup coconut (sprinkle on top) optional

In a large bowl place flour, baking powder, baking soda and salt .  Set aside

Place eggs and sugar in a large mixing bowl and beat until creamy.  Add applesauce and cocoa. Beat until blended.   Fold in flour mixture while also adding yogurt. Beat well.  Add mashed bananas slowly and keep beating until all blended.  Place in lined muffin cups or well greased(cooking spray) loaf pan.  Bake 350 degrees  approximately 20 to 30 minutes for cupcakes or approximately 35 to 45 minutes in loaf pan. Cool slightly before serving!

Makes approximately 12 muffins.
