A few more Appetizers for holiday entertaining!



Make your entertaining simple by serving 3 or 4 small appetizers
Here are  few more easy appetizers you may want to consider.. I have made all of them for the exception of the Spanish Pepper Dip..(I thought it looked interesting).. I plan on making it for a social I am going to on New Year's Eve.  Happy Entertaining from my kitchen to yours...

Celery Dip

No exact amounts!
grated Sharp Cheese
grated onion
grated or chopped green pepper(drain)or towel pat dry
Pinch of salt and pepper
Mayonnaise  (enough to get it smooth)

Blend ingredients in a medium bowl. Set aside

Wash thoroughly celery parts..Cut in pieces and spread on celery...Refrigerate or serve immediately..

Hot Crab Dip

8 oz. cream cheese(softened)
3/4 cup mayonnaise
2 tablespoons minced onion
1 tsp. horseradish, drained
1 tsp. Worestersire sauce
1/4 tsp. salt
1 -6 oz. crabmeat drained
Butter for coating baking dish
Sliced or chopped almonds

Heat oven to 325 degrees..Blend  ingredients and then carefully add crab meat.
Transfer to buttered 2 cup ovenproof bowl or casserole dish
Top with almonds and bake 25 minutes until heated through

Serve with crackers

Toasted French Bread with pesto

1 loaf French Bread sliced (ask baker to slice)
Olive Oil
Jar of pesto sauce(deli dept. or condiment section of supermarket)

Using a pastry brush coat french bread with olive oil...Spread pesto on bread. Top with a bit of mozzarella cheese and bake 400 degrees about 5 to 7 minutes or until lightly browned..(Watch carefully as not to burn)

English Muffin with Roasted Red Pepper, mozzarella and black olives

After brushing slightly with olive oil , broil or lightly toast a sliced English Muffin..Place a large piece of Roasted Red Pepper on it after toasting...Top with shredded  mozzarella and black olives..Place back in oven until cheese has melted. Note:  I use a toaster oven (I can do 6 halves).

Spanish Pepper Dip

1 jar 10-12oz. Roasted Red pepper, rinsed and drained
2 oz. feta cheese, crumbled
1/2 cup sliced almonds, toasted
1/3 cup Parmesan cheese
1 tablespoon red wine vinegar
1 large clove garlic minced
1/2 tsp. red pepper flakes
Tortilla chips 

Combine all ingredients in food processor..Pulse until smooth..Transfer to serving bowl and season to taste. Serve with Tortilla chips.
