Bruschetta: A great appetizer!

This would be an excellent idea for a Sunday Football Game!  Bruschetta!!!!!







I've made this Bruschetta often so when I received a request..I found it right away..I'll be making it soon but wanted to get this out for a special friend:)

6 firm Roma tomatoes( centers cleaned out(remove seeds) and tomatoes chopped)
1 Tablespoon fresh basil chopped(you can used dried as well)
4 tsp. minced garlic
4 tsp. olive oil
2 tsp. Red Wine Vinegar(Balsamic drizzle can be used as well)
1/2 tsp. salt..
Crostini or French Bread ( cut into thin slices) 
Extra  Olive oil to Brush Crostini
Optional chopped black olives


Mix tomatoes, basil, garlic , olive oil ,vinegar and salt in a bowl.  Refrigerate. The longer it sets the better the flavor.  I added a few chopped black olives too!


Brush Crostini with some  olive oil and sprinkle with  some Pecorino Romano grated cheese..  Place on cookie sheet olive oil side down .  Bake 450 degrees for about 5 minutes until slightly browned. Bread should be crisp.  Let cool .  Top with Bruschetta.  .Enjoy!
