Italian Stuffed Peppers

I have made several types of stuffed peppers and today I'm calling them Italian stuffed peppers because my seasoning is very similar to my recipe for homemade ravioli for the exception I am using ground sausage as my main ingredient.
I served this meal with brown rice as a side.

1 lb. approx. sweet Italian ground sausage (remove casing if using link sausage)
1 med. onion finely grated
3 T. canola oil
1 cup baby spinach broke in pieces
1/2 cup Italian cheese grated
1/2 cup breadcrumbs
1 egg beaten
1 large can tomato sauce or crushed tomatoes. 





Saute sausage and onion  in 1 T olive oil and break into small pieces while cooking.  Drain excess grease if necessary.

Remove from heat add spinach, Italian grated cheese and breadcrumbs.  Stir. Add beaten egg and mix to blend.. Cool. 

Remove center from 4 small to medium size green peppers.  Rinse well.  Fill each pepper with sausage mixture.  

In a large deep pot add 2 T canola oil.  Brown filled  peppers slightly.  Add 1 large can tomato sauce, a little salt, pepper and garlic if necessary.Cook on medium to low heat covered until peppers are tender.  Enjoy!

Broccoli Bacon Slaw

I don't like to waste anything if possible so today when I decided to make Broccoli and Pasta Aglio E Olio (pasta with garlic and oil)..I used the stalks (cleaning them well and cutting them in cubes)..You can grate the stalks on a cheese grater as well, using the large section to grate.  I decided to use the chopper and my slaw is very fine and that's OK with me..

Hubby likes the larger slaw!  Here's my recipe..Hope you enjoy it!  Making burgers on the grill..Chips and this slaw as a side..Happy Cooking!

4 stalks broccoli stems (grated as you do for regular coleslaw)You can add some pieces of the flowers to it after you have grated it. (small pieces)...
1 slice red onion chopped
1 small carrot grated
Pinch salt
2 + tablespoons Miracle Whip salad dressing
1/4  to 1/2 tsp. sugar (depending on your taste buds)
2 tablespoons Bacon Bits (I used Hormel Real Bacon Bits)

Grate broccoli, carrot and onion.  add sugar, salt  and salad dressing..Add bacon bits..Refrigerate until ready to use..

Note you can chop ingredients or use a food processor depending on time.

Pepperoni Rolls and quick bites!

Here is a repost for Super Bowl Party yummy's.  They are not difficult to make and always appreciated. I started making these rolls years ago for a quick lunch, dinner or a take along for parties we have gone to. They are always a hit!!!!!!!!and they freeze wonderfully! Check bottom of blog for the Quick Bite version.

Recipe:

1 lb. sandwich Pepperoni(sliced thin)
1 lb. domestic Provolone(sliced thin)
3 frozen bread dough or 36 frozen rolls.  I use Rhoades bread products .

Appetizer or snack!


After the dough has risen you can easily roll and cut in large slices and make small bites.  These are great appetizers.!


Section dough into three pieces, place pepperoni and cheese on slice, roll like crescent roll! 

Bake approximately 25 minutes or until golden color!


On a  large greased cookie sheet place rolls.  Leaving some space apart...Coat top of dough with Cooking Spray. Cover with Glad wrap and follow package instructions.  I usually leave them overnight but if you leave them out early in the day on  the cookie sheet they'll probably be ready in about 8 hours. When the rolls have risen cut the rolls in half..(Picture to illustrate) You will be able to make 6 rolls...Note:  These freeze nicely for later use for an easy appetizer.  Slice, reheat in microwave and serve with marinara sauce.

Note:  You can use ham, swiss cheese, cooked peppers or anything else you would like to put on the dough  Just make sure they are not wet because the dough will not roll well and stick. Pat veggies dry..

Bake 350 degrees for 30 minutes or until lightly browned..Serve with or without Marinara Sauce

Cannellini or Variety Bean Salad/with or without Tuna,Shrimp or Salmon

 Cannellini or Variety Bean Salad!

Great easy salad that you can make and have for leftover lunch.

 1 large lemon(grate one tsp. and squeeze 3 tablespoon juice)

2 cans Beans (any variety)(rinsed and drained) I used Cannellini and Chick peas but any beans can be used..
2 tablespoons pimento(drained)( or a few chopped olives)
3 tablespoons olive oil
2 tablespoons dried parsley
1 clove garlic or 1 tsp. grated onion
1tsp. salt
1/4 tsp.ground pepper
1 can drained tuna or salmon
From lemon finely grated and squeeze juice

It's Salad time in my kitchen!

In medium bowl add beans,grated lemon and juice,pimentos, olive oil,garlic or onion(not both),parsley,salt and  and pepper.  Add tuna , salmon or shrimp..For an added touch you can place bean salad on Romaine or Bib lettuce and of course add in's like cherry tomatoes and peppers if you like! and this handy small grater is a great tool to have!

Mandarin /Pineapple salad?/ dessert?

Do you need a last minute side to take along to a picnic or holiday dessert?

 Well have I got a great easy recipe for you.  It was so easy to make and only a few minutes to prepare.  Refrigerate it for about an hour or even less and you'll make a lot of people love you...

 Four ingredients to make this luscious yummy side or even dessert.  Light, fluffy with fruit mixed through.  It will certainly please guests and you too because it can be prepared so easily. 

If you desire add a few chopped pecans to garnish it.  Not necessary but you who love pecans will certainly like this addition.  

Note:  Great for Brunch or to go along with a yummy ham sandwich. This recipe is a keeper.








Directions: 

I-8 oz. cool whip
1-15 oz. pineapple drained
1-15 oz. mandarin oranges drained

Mix the cool whip and instant vanilla pudding together and add the pineapple and one can of mandarin oranges (save a few for decoration). Drain pineapple and mandarin oranges reserving  a little juice to add if mixture is too thick.

Once done with mixing, place in a bowl and refrigerate for a couple of hours until thickened.
Simple, fresh and delicious! I usually use this mandarin orange salad as a side dish with a meal.  Maybe a burger or a ham sandwich is your delight.  

Can't decide what to make well this is a great last minute food idea. Thumbs up!
