Quick Philly steak with peppers and onions in a Red sauce


I am taking a bit of a break since it's summer and we want easy meals, right? so this is a very tasty and appealing meal.

I decided to make my peppers and onions in red sauce and top my quick frozen beef  Philly steak with it. I love peppers and onions smothered in Red Sauce and I could eat them just that way and lots of time I do..Very quick and easy.  You may like to try this: Soft, toasted or crusty rolls, a must!!!  Enjoy


I love adding corn curls to this...It gives the sandwich crunch and cheese at the same time..


2 or 3 peppers, sliced thin (red, green or others)
3 to 4 tablespoons canola oil
1 medium onion sliced thin.
1 -15 oz. can Hunts sauce
Dash or two of Red pepper and salt if needed

Saute' peppers and onion slowly until slightly brown...Add Sauce, red pepper and a bit of salt if needed..Cover and cook until peppers are tender..Approximately 15 minutes..

Cook all until peppers are slightly tender. Dip some bread and this is a meal!!


This is a great to eat alone or top your steak sandwich. Today we toasted rolls and added the thin chopped frozen sandwich steak with the pepper/ onion sauce.

Note:  I topped mine with corn curls also.  It gave it the right crunch and cheese taste.. Happy Cooking!

A great anytime salad! Greek Steak Salad

The photo isn't as clear as I would have liked it to be but this was one of my earlier experiences with photographing my food and it really doesn't show the beauty of the salad.


As I was looking through  the recipes I have kept over the years I came across this salad that caught my interest..It was from 2003 and I thought it might be nice to serve tonight:

1 beef round steak about 3/4 lb.(I used 2 small Fillets)
1/2 tsp. salt
1/2 tsp. ground pepper
3 tablespoons fresh lemon juice (double amount if you enjoy heavy dressing)
2 tablespoons extra virgin olive oil(double amount if you enjoy heavy dressing)
Pinch oregano ( just a pinch)
1 head Romaine lettuce( broken in small pieces) wash thoroughly
1/2 seedless cucumber(unpeeled and cut thinly)
1 pt. grape tomatoes
1 cup crumbled feta cheese

Heat grill or heat frying pan if doing it on top of the stove with a small amt. of olive oil. Place steak on grill, rub a little oo on it before placing it on grill.

Sprinkle with salt and pepper..Cook until desired center is to your liking.  Cut in thin slices.

Meanwhile in a large bowl, whisk lemon juice, oil,1/4 tsp. salt and pepper.  Add Romaine, cucumber, tomatoes and feta. Toss to coat. Add steak and serve salad with a warmed pita on the side. A 30 minute or less meal! Tasty and Light!

An Asian Salad! Great for lunch (leftovers welcome)

 I love Italian Food  but some times I just have to explore other foods and  I have always loved food with an Asian flair..

Even in my home decorating I throw in an Asian flower or plant now and again..


I like basic salads like Mom used to make but I love to try new and interesting ones too!

If you don't liven a salad up now and again they go from dull to boring if you know what I mean so try something new. I think you will like this Asian Salad.  It is one of my favorites. I'm trying to remember where I got this one but right now I don't have a clue.  It probably was in my Prevention Magazine.  I get lots of my recipes from their magazine. I find their recipes healthy and interesting and to keep me motivated on a healthy track I must try different recipes or make up some myself and most times I try to stay away from mayo. This dressing is light with a hint of sweet and you can serve it warm or chilled..  It just depends on you!

4 cups cooked brown rice ( I used 2  pkg. Brown Rice Boil in a bag)
1/4 cup peanut oil
1 tsp. salt
1/2 tsp. pepper
1 tsp. sugar
1 tsp. sesame oil
1 carrot diced
1/2 cup chopped snow peas
1/4 cup rice vinegar (if you are on a gluten free diet, make sure the vinegar is gluten free)
1 stalk diced celery
1/2 diced red or yellow pepper
2 tablespoons chopped parsley( I used dried)

In a small bowl combine peanut oil, salt, pepper, sugar and sesame oil..Whisk until sugar dissolves..Pour over rice.. Steam carrots and snow peas, drain. ..In a large bowl place steam veggies..Stir in rice and toss until all is coated..Serve warm or Chill.. I liked this recipe both ways.
