Homemade chicken salad

















Served with pepperincini slices and red beets. Crackers to scoop up the salad!

Recipe below:

 I use the whole breast of a rotisserie chicken cut in small cubes or shredded.  
1/2 cup chopped celery,
 1/2 tsp. Onion powder or onion granules.

 In a medium size bowl place half mayonnaise and half miracle whip and a pinch of salt, pepper and paprika. Mix well.   Toss with chicken, celery and onion powder.

 I judge the amount of mayo and MW to the consistency we ENJOY.

  We like mild pepperincini on top.

Covid 2024

I had managed to avoid getting g covid for 4 years.

Today I definitely have it and other than not wearing a mask my symptoms I have been cautious with washing hands and a hand sanitizer.  It has been on the milder side.  More like a bad cold.

Wet cough, tickle in throat and a fever if 102°.

Actually if I didn’t feel chills i probably would t have thought to have a Covid test 

Wednesday a tickle , Thursday a fever and took a test.  Negative on Thursday, Friday positive.

September 14 took a Covid test .  Negative.  I still have a wet mucus cough and lack energy.

September 18,2024.  I still feel sick, no fever but very nasal congestion and lots of mucus.  I threw up yesterday after small noodles got cut in my throat.  A lot of mucus was expelled.  I also now have diarrhea and some nausea.

Added to my being sick I tripped over a box in kitchen on the 8 th of September and thankfully no breaks but I’m in a sling possibly having a torn rotator cuff.  Tripped on September 8. September 18 still have dull  pain, soreness 
And very uncomfortable.
Can’t see orthopedic doctor until September 23 because of Covid  3 week wait.

Short cut cream of chicken and vegetable soup







Soup time.  Whether we are ready or not Fall will be here soon  and there is always time for soup .

I decided today to try and make this soup easier than I have before.

32 oz. Chicken broth
1/2 cup each chopped carrots, celery and onions
4 tablespoons vegetable oil
I tablespoon butter
One half  of a 10 oz. Package frozen corn
1small potato cubed
One half of a package of frozen green beans
1cup acne de Pepe uncooked
1 small can cream of chicken soup 
1 tablespoon dried parsley
1 tsp. Salt
1tsp. Pepper 
Frozen chopped spinach optional 
1cup rotisserie chicken shredded 

Sauté carrots, celery and onions in vegetable oil and butter until slightly soft.
On medium heat Add chicken broth and one can cream of chicken soup.  Wisk until blended.
Add parsley, salt and pepper.
Add frozen or fresh vegetables. Cook on medium heat for approximately I hour or less.  Add 1cup acne de Pepe or your favorite small noodle.  Cook until tender and then serve.  Optional bread and butter and side salad.

This soup was very tasty and even better the next day! Yum!!

Chocolate layer Cake with bananas









This cake was my Dads favorite.

 Chocolate layer cake with bananas.I fudged it using a one box Devils food cake mix.( mom would make her scratch cake).  I’m good to myself taking less steps if I can and truly it’s always delicious..

2 - 9”round cake pans. Spray bottom generously .Follow recipe on box for cake.


Make a small amount of butter cream icing to separate the layers and hold the banana. Powered sugar , tablespoon or two of milk and a little softened butter.  Best well.  Make it on the thick side. 
Use one thinly sliced banana .  If you use too many bananas it may tip the cake so be careful of placement of bananas.
Whipped cream topping 1pint heavy whipping cream, 1 tsp. Pure vanilla extract and 4 tablespoons powdered sugar. Best until
Thick and not watery. Spread evenly on cake and garnish with baking cocoa if desired.

Refrigerate until ready to serve and refrigerate leftovers(if there are any) DELICIOUS!

While hubby was watching Penn State football.  I was busy making fresh Sunday sauce and a chocolate layer cake with sliced bananas in the center.  ( I put a little vanilla cream icing on the cake before I add the bananas)Nothing but the best on top freshly whipped cream.  
Our son is coming over tomorrow to help us a bit so his reward is this meal with a super nice summer salad.

Crockpot ribs Another new recipe

Another new way to make pork spareribs or a full rack of ribs.

I had bought a buy one get one free rack of pork spare ribs at our local grocery store.  

I’ve made them before but decided to try another way to season and cook them.

I made ribs today in my crockpot. 
 2.5 lbs. pork ribs
salt, pepper
1/2 large onion  
1 large clove garlic 
1/2 cup water. 
Your favorite barbecue sauce (approximately 1/2 to 3/4 cup)

Cook 6 hours low. 

 Remove ribs from crockpot.  Discard cooking drippings.

Place on cookie sheet.  Brush with BBQ sauce and bake 375° until sauce starts to bake on to ribs. Approximately 15 to 20 minutes.  Enjoy!
