Basic all Beef meatloaf

Meatloaf  and Stuffed peppers Saturday !

It’s so cold we’ve  staying in  but I must cook.  

Here’s today’s meals!


I’m exercising portion control!(TODAY LOL)







Today I made a half recipe for the meatloaf  and the other half of meat I added onion , cooked rice ,salt and pepper and stuffed a large red pepper as well as two meatballs .  Two meals for two days.

1 lb. ground chuck
1/2 cup breadcrumbs, plain
1 tsp. salt
Pinch pepper 
eggs
1 medium onion finely chopped
1/2 cup milk

NOTE:  Spread some ketchup on top of meatloaf 10 minutes before removing from oven.


Beat egg well.  Add to beef, onion, salt pepper.  Incorporate breadcrumbs and milk.   Meat mixture will be soft but you will be able to form a small meatloaf.

Baked honey glazed salmon

I made this as a half recipe.  I suggest you double the sauce recipe though because it’s delicious and extra sauce is a good thing!

Check my note at the bottom of recipe for changes.

  • 4 boneless salmon fillets
  • 2 tbsp unsalted butter - melted
  • 2 cloves minced garlic
  • 2 tbsp honey
  • ½ tsp dried parsley - or 2 tsp fresh parsley, finely chopped
  • ¼ tsp salt
  • ¼ tsp pepper
  • pinch paprika
  • 1 lemon sliced into half-moons

  • Place the salmon fillets, skin-side-down on the baking tray.

  • In a small bowl, mix together the melted butter, garlic, honey, parsley, salt, pepper, and paprika.
    2 tbsp unsalted butter, 2 cloves minced garlic, 2 tbsp honey, ½ tsp dried parsley, ¼ tsp salt, ¼ tsp pepper

    Preheat oven to 400°.

  • Place the salmon fillets, skin-side-down on the baking tray.( I removed the skin)






  • In a small bowl, mix together the melted butter, garlic, honey, parsley, salt, pepper, and paprika.
    2 tbsp unsalted butter, 2 cloves minced garlic, 2 tbsp honey, ½ tsp dried parsley, ¼ tsp salt, ¼ tsp pepper, pinch paprika
  • Pour the mixture over the salmon fillets (don't worry about any of the sauce pooling on the tray).


  • Arrange the lemon wedges on and around the salmon.
    1 lemon sliced into half-moons
  • Place in the oven and bake for 8 minutes.
  • Open the oven and baste the salmon with any of the sauce that has pooled on the tray. Bake for a further 4-7 minutes until the salmon is tender.
  • Serve with your favorite potatoes and green veg.
    I had seasoned acne de Pepe and fresh broccoli.
    ****Note:  I baked the salmon about 10 minutes with half of the glaze.  Then removed from oven and baked another 15.  We like it more on the medium to well done.

Beef in cast iron pot



I really love my cast iron pot.

I have two sizes and today I used the smaller one for our beef dinner.

I had about 1.5 pound piece of thick round steak
1 package onion soup mix
1 cup water
3T Vegetable oil

I seared the beef in the vegetable oil and then added the onion soup water mix.  

Baked in pre heated oven @ 350° for approximately 11/2 hours or less.  Because of the cut it baked quickly.
I tested it with a fork and it cut easily and was very tender.
A delicious meal.

Baked Cod












  • 4 

    cod filets, about 1" thick

  • Kosher salt

  • Freshly ground black pepper

  • 4 tbsp. 

    extra-virgin olive oil, plus more for baking dish

  • ****1 c. 

    cherry tomatoes ( I used I cup drained petite tomatoes)

  • 1 

    lemon, sliced, plus more for garnish

  • 2 

    garlic cloves, smashed but not peeled

  • 2 

    sprigs thyme***(I used 3/4 dried thyme)

  • 2 tbsp. 

    freshly chopped parsley, for garnish(I used 1 tsp. Dried parsley)


  1. Preheat the oven to 400° and pat cod filets with a paper towel until dry. Season all over with salt and pepper. 
  2. Step 2Combine olive oil, cherry tomatoes, lemon slices, garlic, and thyme in a 9"-x-13" baking dish. Toss to coat and spread into an even layer. Nestle cod pieces into baking dish. 
  3. Step 3Bake until fish is opaque and flakes easily with a fork, 15 to 20 minutes, depending on thickness of filets. 
  4. Step 4Serve garnished with parsley, more lemon juice, and pan sauce.


Dessert too!


Tip:
placed the lemon slices under the fish. The fish will not stick to the bottom and the lemon will seep into the fish.

Updating my laundry room






 I got a little sidetracked from baking and cooking and decided to take a gamble doing a project I would never have thought of years ago.

Painting my tile backsplash in our laundry room .


Step one:
Make sure the area has been cleaned well with soap and water or a tile cleaner.  Dry thoroughly.  I allowed mine to dry overnight to make sure.

Step two:

Tape area with masking tape making sure to mask carefully so you won’t allow paint to spread to area you do not want paint to get on.

Three:

With a good quality small sponge roller brush roll all areas.  This process will probably not cover area so once the area is painted allow to dry several hours.

Four:

Cover paint and roller brush with plastic wrap so it won’t dry.  Set aside.

Five:

Paint area making sure to go side  to side ,up and down back and forth to make sure paint gets in all areas especially grout area.

Allow to dry thoroughly making sure area is not sticky to touch.

At this point recheck to see if the whole area as well as grout is covered thoroughly.  IF NOT APPLY THIRD COAT OF PAINT. 

Note:I NEEDED (3) coats.  Allow to dry overnight.

The next day with a clean sponge roller brush apply light coat of polyurethane.  My polyurethane is Decor art liquid water based polyurethane.  Easy clean up.

NOTE**** all my paint was water based so easy clean up.  Make sure you clean brush and sponges thoroughly.  I actually used a new sponge roller for the polyurethane.

I applied (3) light coats of polyurethane making sure to get into grout as well.  Light strokes .  You no not needed to apply heavy coats of polyurethane.

Good luck!  This actually was a fun project.

****For the first time attempt to paint tile backsplash I was pleased with my results.

This was a small project and plenty for me to get a feel of sponge painting.
