Slow cooker thinly sliced roast beef

An easy weekend hot sandwich meal.

We had a busy morning so thinking ahead while we were out I picked up at the grocery store a pound of Dietz and Watson thinly sliced roast beef. We seldom eat deli meat so Quality deli meat is important.

Fresh French bread warmed.  Yummy!

  • 1 pound thinly sliced roast beef

  • 1 (.7 ounce) package dry Italian-style salad dressing mix

  • 1 (16 ounce) jar pepperoncini, sliced

  • 1 (10.5 ounce) can beef broth


    Combine roast beef, dry dressing mix, pepperoncini, and beef broth in a slow cooker. Cook over medium-high heat until hot, about 1 hour.

Air Fryer Wonton Ravioli


If you want a great appetizer with an Italian flair you must try these.




1 pkg.  Wonton wraps
1/2 lb.  Italian meat ravioli filling
Jar marinara sauce
Pecorino Romano or Parmigiana cheese grated 



This idea came on me by chance.  I was going to make a package of wonton wrap filled ravioli and about 12 did not seal well so I knew I didn’t want to waste them but also knew I couldn’t boil either.

Bingo!  I got out my air fryer and spray the bottom of it with cooking spray and placed them in my air fryer that I warmed to 380°.  I placed all of them not touching each other and watched them every 3 minutes to see if they browned.  Note( make sure to check frequently but once they are browned slightly remove them from air fryer),

Top with marinara and a little Pecorino and omg they are delicious.


this recipe is for about 50 ravioli or stuffed shells.  Cut the recipe in 1/3 for this appetizer.

Note:  you can make the whole recipe and it will freeze nicely for appetizers another time or stuffed meat shells.
Ingredients:

Note:  Great filling for stuff ing large shells as well.



1 1/2 lb ground beef, pork and veal(meatloaf mix) or any other combination
1 tsp. salt
pinch of pepper
1 small onion grated
 1 clove garlic minced optional
2 tablespoons canola or olive oil 
1 egg beaten
1 pkg. 10 oz. chopped spinach(drained well)
1/2 c. breadcrumbs
2/3 c. grated cheese(Romano, Pecorino Romano)

Cook meat mixture with finely chopped or grated onion, salt and pepper and minced garlic in oil until lightly browned. Breaking up with spoon while it cooks into small pieces. 

While meat is cooking in a separate pot bring 1 pkg. chopped spinach to a boil separating while cooking..  

Take off burner and drain thoroughly squeezing all water out.

After draining spinach add to meat mixture and stir until spinach is blended thorough..

Take off heat and add beaten egg, breadcrumbs and grated cheese(don't skimp on cheese) making sure to coat all of meat.

Place in bowl and let cool.  After cooling cover tightly and refrigerate until ready to use.  

You can make mixture several days in advance.  Cook shells according to package directions fill and cover with red sauce and bake covered at 350 degrees for approximately 30 to 40 minutes depending on your oven. 

 Remove covering and bake an additional 10 minutes or until cheese is melted and sauce is bubbling.

Strawberry/ Blueberry Cobbler like Mom would make!

This berry cobbler has been one of the if not the most viewed post on my blog.  Thank you!



  You can do this with any berries that you may like.  I have lots of frozen berries (strawberries, blueberries and raspberries so I am going to follow this recipe below and use all that I have to make something light(just might hit the spot and add some vanilla ice cream to warmed cobbler if you desire).

  I am going to thaw my berries before I mix them.  I have seen frozen peaches, blueberries and strawberries etc. in the frozen food section of the grocery store so if you can't find fresh  use thawed frozen berries...Yum

Patriotic to the RED, WHITE and BLUE!

While browsing through my People Magazine I came across a recipe similar to Mom's and decided to give it a try.  Mom's recipes are in a huge wooden recipe holder and she gives me recipes in dribs and drabs (that's how she would refer to items of personal interest) to find hers.  Today I opted to make a Cobbler instead of strawberry shortcake. She would make fresh Baking Powder Biscuits and crush fresh strawberries to put on top.  Of course Real Whipped Cream in a huge scoop on top.. Super easy recipe and I used fresh strawberries and blueberries. A nice dessert either served warm or room temperature.

Slightly spray bottom of a 9 x13” baking dish.  Place sugared blueberries in dish.  Add cobbler to top.  (Large heaping tablespoons ).

Strawberry/Blueberry Cobbler   (Sue Zemanick’s)

2 pints strawberries hulled and quartered
1 pint blueberries
1 cup sugar divided
1 tablespoon cornstarch
¾ cup flour
1 tsp. baking powder
½ tsp. salt
1 egg
¼ cup milk
½ tsp. vanilla extract
6 tablespoons butter, melted

Heat oven to 375 degrees.

In a bowl, combine all berries, 1/3 cup  plus 2 tsp. sugar and 1 T cornstarch. ****(Don’t forget the cornstarch)Let sit for 10 minutes.

In another bowl, mix flour, ½ cup sugar, baking powder and salt.  In a 3rd bowl, stir egg, milk, vanilla and butter.  Add dry ingredients.  Stir well.

Place six, 6 oz. ramekins on a baking sheet.  Divide fruit evenly and top each with a few spoonfuls of batter.  Bake 25 to 30 minutes until tops are golden brown.  Cool 5 minutes and serve.

Red sauce with Bone-in Country style spare ribs

Sunday Sauce!

I used Tuttorosso crushed,  purée and sauce today.


2- large crushed tomatoes 
 1- large tomato puree
1- 15 oz. Sauce. 
1lb. Bone in Country style spare ribs 
1 1/2 lb. Home made meatballs that I bake in oven.  

Meatball recipe:

l  3/4 lb. meatloaf mix or any combination or meats
1 1/2 tsp.salt
pinch pepper 
2 or 3 cloves minced garlic 
1 tsp. parsley
1egg beaten
1/2 cup breadcrumbs
3/4 cup Italian cheese)grated (Romano, Pecorino Romano)
1/2 cup milk

While running your hands occasionally under cold water, mix all ingredients with hands until blended thoroughly.  Recipe should make about 50 small to medium meatballs.  Bake 400 degrees until lightly browned.  Add to Red Sauce Recipe or Sauce of your choice.

Todays sauce was seasoned with 3 garlic cloves minced 
1 tsp. Dried basil.   
1tsp. Onion powder, 
2 carrots skinned and cut in half. 

 I salted the ribs and baked them (400°) along with the meatballs until they were slightly browned  Add to sauce after all are slightly browned.

 I made the sauce today in my crockpot on low for at least 5 hours.  
Serve over your favorite pasta.  Todays pasta was Pappardelle.

Lemon Poke cake




Can’t sleep?  Bake lol.  

A basic white cake mix and a box stove top lemon pudding make this cake delicious and refreshing.

Top with either cool whip for convenience or beaten heavy cream.  I added some sweetened coconut to half of cake.

****For extra added lemon flavor add 1/2 tsp.  lemon extract or juice to above topping. Mix with a large spoon to combine.





I had the white cake mix and it needed 5 egg whites so not to waste precious egg yolks I decided lemon pie filling had to be my choice today.

We both love lemon so this was a no brainer.


1-Betty Crocker box white cake mix prepared according to directions and baked.
****1- box lemon pie filling prepared or chocolate pudding would work too (stove top recipe)according to directions or
****Shortcut recipe for cooked pudding and use canned pie filling or instant pudding 
1-8 oz. Cool whip or
1- 1/2 pint whipping cream(beaten with 3T confectioners sugar, 1tsp. Vanilla).
Sweetened coconut optional


In a 9 “x 13”pan bake cake according to directions.

Once cake is baked remove from oven and using the bottom of a large whisk press down deep ( if you like a lot of lemon filling) to make indentations spacing every so often. ****Note cake must be hot so poke holes immediately when removed from oven.



Allow cake to cool. Top with prepared lemon pudding 

While cake is baking make lemon pie filling according to directions.

****Allow to cool to warm or refrigerate overnight and put  cake together the next day.
