Provolone stuffed meatloaf!

From the I like to bake and cook archives. It’s a good one!!!



Creating some interesting meatloaves has been a hoot! I am sure I'll  tire soon but here's another yummy loaf that was super easy and you can either serve it with a vegetable, salad or maybe even a little pasta.  Note:  I put this together, covered and refrigerated it until I was ready to bake it.

1 to 1/2 lbs. ground pork( you can use meatloaf mix as well)
1 egg slightly beaten
1 tablespoon Italian seasoning
1 to 2 cloves minced garlic
1/4 cup bread crumbs
1/4 cup  grated Parmesan cheese
1/2 tsp. salt
1/2 tsp. pepper
1/4 lb. provolone cheese shredded ( I bought 1/4 piece of provolone and grated it)
Jarred pasta sauce



In a large bowl place pork, Italian seasonings, bread crumbs, salt, pepper,beaten egg and grated Parmesan cheese .

Press half of mixture in sprayed with cooking oil pan.

Place grated provolone cheese.  (You could use thickly sliced provolone too)
I served it with pasta on the side (jarred sauce if desired)

Gently pat remainder of meat mixture on top





Spray a loaf pan with cooking oil.  Place half of meat mixture on bottom.  Press firmly.  Sprinkle shredded Provolone cheese and top with remainder of meat mixture.  Place in 350 degree heated oven and bake approximate 1 to 1/2 until browned and firm to touch. Add a side salad and your meal is complete.  You can top this with jarred pasta sauce and cheese if desired.

Filled and Rolled Meatloaf with provolone and sliced tomato!

It was one of those days that I didn't have a clue what to make for dinner.  I did have approximately 1 lb. of ground chuck I had bought yesterday so I kind of figured it was going to be a meatloaf kind of meal.  Not the regular meatloaf but something a little different. Yum!

As I scouted my refrigerator the only things I had that seemed remotely doable were shredded provolone and a nice ripe tomato.  So all in all this combo seemed like it may be something enjoyable and it sure was.  It was so good that we nearly ate the whole loaf. A pound isn't a whole lot for two people though so you may want to double the recipe and make two.  It will be easier to roll if you make two l lb. loafs.





Chive mashed potatoes, Diced cucumber and sliced tomato


Ingredients:
1 lb. ground chuck or lean beef
1 medium onion grated (use onion juice too)  My onion was really juicy
1/2 cup garlic bread crumbs
1 egg beaten
3/4 tsp. salt
1/4 tsp. pepper

In a medium size bowl place meat, onion, bread crumbs, salt, pepper and egg. Mix together, roll into a ball and cover and place in refrigerator for approx. 1 hour.  Meat will roll better when firm.

On a clean surface flatten meat and roll with rolling pin until the size of a large flat round/ oval shape.  I'll show some illustrations.  Place shredded cheese and tomato slices on top (add a little more salt and pepper or Italian seasoning) and roll from widest end to center.

Place in greased bread pan and bake at 350 degrees for approx. 1 hour uncovered or until juices are clear.

Two mini Chicken loaves! My way!!



This is a throw back recipe of my from several years ago and I thought being it's Monday I'd share it again with you.  Enjoy!


 Keeping up with my Meatloaf Monday theme here is an early posting,  hoping you'll find it useful if you are doing some grocery shopping today.  Using approximate 1 lb. of ground chicken I decided to make two different chicken loaves..I have used ground chicken but only several times so this was a first try in a loaf type meal. In the ingredients section  I have labeled #1 and #2 hoping it will be helpful trying not to confuse you.

Note:  Be creative try making these with some add in's you and your family might enjoy!  




In a medium bowl place ground chicken, beaten egg, onion , salt, pepper and parsley.  After working through chicken mixture, separate into two small loaf size portions. Place in two separate bowls.




Chicken loaf #1

To ground chicken mixture (note basic ingredients) add 1/2 cup crushed Town House crackers or bread crumbs if you prefer, 1/4 cup cheese blend, such as mozzarella, Parmesan and provolone. ( Cheddar cheese an option too!)


If you like broccoli  and want to add it to the sauce cheddar cheese may be a better choice. 


  Bake 350 degrees uncovered for 45 minutes to one hour.    I topped this loaf after baking with a white broccoli cheese sauce. Serve warm with a salad or vegetable. Note:  This loaf can also be used to make meatloaf sandwiches.  Cold or warm on fresh bread or crusty rolls topped with either ketchup, dijon mustard or your condiment of choice.

To make a nice gravy type topping . I made a white sauce with broccoli.


Spray pan and place loaves in oven to bake. You can freeze one for later use.
 White Sauce for topping!

I used chicken drippings, added enough water to make 1 cup.  Placed approximated 1/8 cup flour, pinch of salt and whisked until smooth.  Cooked on medium heat until it started to thicken and added approximate 1/4 cup cheese (I used blend but Cheddar might be better and will add some color).  After all had thickened added some chopped broccoli that was already seasoned with olive oil and garlic to make a great topping for the chicken loaf..  Yummy!!! 


Chicken loaf #2


To ground chicken mixture(note basic ingredients) add 1 slice bread that has been moistened with milk or water while breaking apart, 1/2 cup Pecorino Romano cheese, 1/8 tsp. garlic powder, pinch of thyme..Set aside..Top with 1- can tomato and diced Chilies. Cover tightly and Bake 350 degrees approximate 45 minutes to 1 hour.



Note:  As a last minute thought I filled one large hollowed out and cleaned green pepper, covered with 1 can tomato, chile or jarred pasta sauce.. This one is a bit spicy so some nice marinara on top may be a better choice for those of you who don't care for spicy..



I used easy throw away disposable pans in case you want to freeze one and I  stuffed a green pepper with the mixture for another day! 




 Ingredients for two mini  loaves: (Basic ingredients are not numbered)

 1 lb. ground chicken (you can use a little more than a lb.)

1/2 cup Town House Crackers (crumbled fine)( Bread crumbs can be substituted) #1
1 slice bread broken in pieces #2
1 egg slightly beaten
1/2 + cup Pecorino Romano cheese (the best cheese for flavor)#2
1/4 cup cheese blend #1
1/2 minced onion
1/8 tsp. garlic powder
pinch of dried thyme
1+ tsp. parsley(save a little for top of meatloaf #1)
1/2 tsp. salt
1/4 tsp. pepper
1 -10 oz. can  Diced tomatoes with green chilies( drain slightly)or pasta sauce  #2
1 large green pepper (optional) #2

Italian Meatloaf! Tonight's easy meal :)


 Today I am trying to be very good in my food choices again.  I know I tend to repeat myself in that area. lol.  In a effort to take off a few pounds I am trying very hard to cut back on carbohydrates.  They are my weakness!!! I am going to cut back and but not eliminate them. Makes sense to me, hopefully you too!

I added some fresh strawberries to our salad for a summer flair.

Italian Meatloaf!

1 lb. + beef, pork, veal or meatloaf mix** (this time I used more veal and pork and a little beef)
1/2 cup Progresso Garlic and herb breadcrumbs(love them)
*note other breadcrumbs can be substituted
1 tsp. salt
pinch pepper
1 large clove garlic minced
1 egg beaten
1/4 cup water
1/2 cup good quality Italian cheese grated
2 T olive or canola oil
1/4 cup marinara sauce for topping
 
The night before why not prepare mix and wrap to be prepared for your next day lunch or dinner.


Fork in center told me my meatloaf was cooked properly.  Juices were clear.


Mix using your hands above mixture adding water as you mix to incorporate ingredients. I suggested 1/4 cup but depending on your meat you may not need as much or maybe a bit more.  Judge by how easily the ball forms.  You do not want it to be dry .  Form into a ball or loaf size.  Place in a slightly greased (canola or olive oil) baking dish and bake 350 degrees for approximately 1 hour or more.  Test center with fork to see if juices are clear. I did not cover my meatloaf and I used a convection oven so ovens vary.  My meatloaf was slightly over 1 lb.


About 15 minutes before serving meatloaf I topped the meatloaf with marinara sauce.  **Ketchup can be used as a substitute.

Serve with a tossed salad or seasonal vegetable.

Stuffed Meatloaf: Italian Style

One of Dad's favorites: Stuffed Italian Style Meatloaf!!!! 


I served it with  Bibb lettuce and vinaigrette dressing salad.

 Dad loved stuffed meatloaf and honestly when Mom didn't have the time she'd use Stove top stuffing instead of her homemade stuffing . (Don' hesitate to use box stuffing. .It does speed up your meal).  Today I did her recipe but put it in a baking dish (stuffing first and then topped it with meat mixture. (She used to put her meat mixture on the bottom of the dish and then put her stuffing and then top it with the remainder of the meat.. I decided to try it a little different. It baked quickly, about an hour or a little more.  My meat was under 1 lb.  Delicious and presents beautifully!  Nice for entertaining a small group.  Serves 4 medium portions.

Ingredients for meatloaf:
-->
¾ to 1 lb. ground pork (beef or turkey can be substituted)
1 egg
½ cup bread crumbs (regular or seasoned) I used Garlic Herb breadcrumbs
1 small onion grated
1 to 2  cloves garlic minced
½ tsp. salt
1 tsp. dried parsley
pinch pepper
½ cup milk

Topping:
1 to ½ cups marinara sauce (jarred or homemade) I used my homemade easy recipe sauce using Tuttorosso crushed tomatoes)
¼ cup mozzarella for garnish

Meat Mix

In a medium bowl place pork, breadcrumbs, egg, onion, garlic, parsley, milk, salt and pepper.  Mix together…Set aside

Stuffing

1/3 cup Italian style bread (broke in pieces)
1 egg beaten
½ to ¾ milk
dash pepper
½ cup Italian cheese grated
¼ cup shredded mozzarella
1 small onion chopped
1 stalk chopped celery
4 tablespoons butter (salted)

In a pan melt butter, add onion, celery…Saute until translucent

In a large bowl put broken bread pieces, 1 egg beaten, ½ cup milk, cheeses..Set aside.. Add slightly cooled butter mixture.  Mix together with hands until bread in well moistened.. Set aside
Preheat oven to 350 degrees.  Lightly grease an 8 x8 inch baking dish with butter..  Place stuffing mixture in dish.. Top with meat mixture.. Bake 1 hour or until browned.. Take out of oven top with Marinara sauce and shredded mozzarella.  Bake 5 to 10 minutes more or until Marinara is warmed and cheese is melted and bubbly..

Meatloaf Monday!!


 Re-Post of Mom's Recipe for Meatloaf!!




I've been thinking of different ideas and recipes for my blog.  I am going to start posting, on Monday's, in a few weeks using various different meatloaf ideas.  I will start with a few of my favorites and then I am going on to create some others using basic ingredients I have at home and probably some from the local market or grocery store.. Variations  which will  introduce new ways to add some nutritious and flavorful items to a particular meal.. Here's hoping you'll like this new idea.  I hope to be starting it soon..Happy Baking and Cooking!  Here's a starter recipe!

 With Valentine Day approaching I didn't get a chance to post our Meatloaf Monday meal. It is still a favorite and easy to do.  Today it was the basic but we both love it either stuffed with mashed potatoes (posted earlier on the blog) or Italian stuffing( blog post too! (which is my very favorite)..Mom's basic meatloaf recipe along with mashed potatoes and gravy was the request from hubby today.  I also made some saute' brussel sprouts, asparagus, onions, garlic and carrots .Take some time and make a meatloaf (leftover meatloaf sandwiches are a plus)+.








First steam (microwave)Brussel sprouts for a few minutes to soften a little. To a large skillet add several tablespoons OO .Saute  Brussel Sprouts, sliced onion,, asparagus, sliced carrots, salt and pepper and top with bacon bits.

Sharing my Wonderful Bacon Cheeseburger loaf!!



When possible I will post these easy loaf recipes on Sunday so it will allow you the time to get your ingredients if you are choosing to make  it on Monday!  Hope that makes some sense to you!!  A first time try!   This meatloaf will certainly be a regular here in our home.. My hubby loves burgers and I am so so about them but thought I'd try something along the lines of a cheeseburger but all in one. Using two pieces of thick cheese in the center and adding bacon bits and a little ketchup this turned out to be a great first time try.  Feel free to add pickles and mustard too if you like.  Just be careful not to add too much.  You want the loaf to seal on the ends with no difficulty.






 Note:  Leftovers are great heated in the microwave!!


Cheeseburger Loaf

1 lb. ground beef
1 medium onion (chopped)
salt and pepper to taste (approx. ½ to ¾ tsp.)
1 egg slightly beaten
½ cup ketchup
¼ cup bacon bits
¼ lb. thickly sliced cheese (mozzarella, velvetta, provolone) American cheese may not stay together well when baked)
2 soft hamburg buns(two slices soft bread can be used as well)

 In a large bowl combine beef, onion, salt and pepper.
 Break buns into small pieces.  Moisten bread slightly with water before adding to beef.
Mix beef mixture and bun pieces, salt and pepper, onion and beaten egg  well until all is blended.  Form one large loaf.  Cut in half.  Flatten into 2 pieces.  Place cheese, bacon bits and a slight amount of ketchup in center

Note:  You can add a few pickles and mustard also if you would like but only a slight amount.. Place top of meat on mixture and seal sides.



 Lightly grease a loaf pan with cooking spray, rub ketchup on loaf and bake 350 degrees 1 hour or more.  Do not cover.
