Oh so good side dishes! Parsley Potatoes and Red Beet Salad!

Here are a few sides that go with just about any meal.  Parsley Potatoes and Red Wine Vinegar Red Beet and Scallion Salad . 

 Parsley Potatoes:

Boil approximately 2 potatoes(cut in cubes) or more until tender in salted water.  Drain, add some butter, dried parsley and onion. Cook for a few minutes. Great side for chicken, beef , fish or ham.  Easy to do!

Red Beet Salad:  You can use fresh or canned beets.  You can use either fresh or canned beets.  Make sure to drain beets well before adding red wine vinegar.

P.S.  Adding a sliced cucumber to this veggie adds some super crisp crunch to it. Enjoy!






Dressing for beets:  1/3 cup red wine vinegar, 1/4 tsp. sugar,1/4 tsp. salt,, 2 chopped scallions(you can use 1/2 tsp. onion powder if you would like) Toss together and Chill until ready to serve..Easy as can be! A great side dish to compliment most meals.... Happy Baking and Cooking!
