Fresh Roma tomato sauce

I had fresh Roma tomatoes so I decided to try my hand at a small amount of fresh sauce for pasta fagioli.




8 to 10 Roma Tomatoes washed
Boiling water
Place tomatoes in boiling water.  Allow to remain in water until you see skin start to peel.  




Remove tomato skins snd core .  Place olive oil in a deep pot.  Allow olive oil to start to sizzle, add two cloves of minced garlic and simmer slowly making sure not let garlic burn.








Crush tomatoes with your hands and place in garlic oil.  Add some salt, a fresh basil leaf or two and Simmer on low for about an hour.  Remove tomatoes and put through a sifter or foley mill to strain any remaining seeds.

I added 2 tablespoons of tomato paste to help thicken the sauce.

Peach yogurt coated chicken cutlets

I love playing with ingredients I have and having delicious results. Today was one if those days! 5***** from hubby!

Today it’s thin sliced chicken cutlets coated in peach yogurt and breaded with Panko bread crumbs.

Ingredients:

2 large boneless chicken breasts filleted. ( I filet them when slightly frozen).
I container peach yogurt 
Pinch salt
Panko Bread crumbs 

Heat oven to 350 degrees

Spray a small cookie sheet with cooking spray. 

Dip chicken breasts generously in yogurt spreading to coat and then
Immediately into breadcrumbs. 

Place on cookie sheet.  Spray lightly coated chicken breasts.

Bake approximately 30 minutes.  Do not over bake.

Homemade macaroni and cheese with stewed tomatoes as our side dish.

Easy Banana pudding

Sweet tooth craving!








Are you looking for an easy dessert that so delicious and serves several?  This recipe might be for you.

I pkg. instant pudding made according to directions( I add a little more milk then what is called for).
2 or 3 sleeves Graham Crackers
2or 3 sliced or diced bananas 
Large container of Cool whip or heavy whipping cream

Layer a 13x9 glass baking dish with Graham crackers 

Note:  if you enjoy a heavier base use two layers of graham crackers.

Using a wire whisk blend milk with instant pudding until pudding starts to thicken.

Mix in bananas 

Gently place pudding mixture On top of graham crackers.

Place dish in refrigerator for several hours to have the pudding set.  Remove and Top with Cool whip and a handful of crushed graham crackers.

Refrigerate overnight or several hours.

Enjoy!

Whole grain banana muffins

A great cupcake /muffin recipe given to me from a friend.

Kind of a lazy day So I copied the recipe in photo form hoping you can read it.

My friend is gluten free and used pumpkin instead of bananas.

Enjoy!

I iced mine with a cream cheese icing and topped with a few pieces of pecans and brought them to my neighbors as a Sunday gesture of kindness. 

Serving them plain would be fine for your morning coffee or tea!

Baked apples

Welcome to fall.  I have many recipes using Apples.  Here is one of many.

 Note: I used Gala apples for this recipe but Pink lady as well as many other apple varieties can be used.

I wouldn’t use  a Delicious Apple because it is more of an eating apple as opposed to a baking apple.

Fall easy any day dessert.



6 washed and cored apples.  Use small spoon or apple corer to 
Remove seeds.

Place washed apples in a square baking dish. I used a 9”x9” glass baking dish.

Fill pockets with approximately 1 tsp. Brown sugar and Sprinkle of cinnamon. Top with pat of butter.

Note: you can also add chopped pecans or walnuts to inside too!

Boil 3/4 cup water.  Place carefully into baking dish next to apples.

Bake 35 to 40 minutes without over baking.

Spoon juice over apples and serve alone or with a scoop of vanilla ice cream.
