Simple and easy to make sausage bake


Boy was this easy!
















All you need is a:


11”x9” baking dish or 9 x13”.
Cooking spray to coat bottom of baking dish
1 lb.  Bulk hot or sweet sausage 
8 oz. Softened cream cheese
2 pkgs. crescent dinner rolls 


Preheat oven to 350°. Spray with cooking oil the bottom of a 9 x 11” baking dish.  

In a large pan over a medium high heat cook and stir sausage until  brown and crumbly.  Drain and discard grease add  softened cream cheese until It is combined.

Roll Crescent roll dough from one can into the bottom of a prepared baking dish without separating. 

Bake in a preheat 350°oven for about five minutes. 

Remove from oven ,spread sausage mixture over baked crescent roll.  Place the other roll on top.

Continue baking until the top layer is golden brown about 10 to 12 minutes. Check after 8  minutes. 

Note: mine never got brown so I removed from oven in about 10 minutes .  I knew it was ready because the edges were brown .  It was perfect.  I sprinkled a little dried parsley for presentation.

I served with a nice wine vinegar and oil dressing.  It was the perfect choice since I used HOT SAUSAGE

New recipe for Mayo chicken

  Another recipe for mayo chicken. No breading involved!

A very easy meal to make in about 30 minutes plus a small amount of time  for prep!

   6 pieces of chicken) I use chicken breast )
  • 1 cup mayonnaise

  • 2 cloves garlic, crushed

  • 1 tablespoon finely chopped fresh rosemary

  • 1 teaspoon salt

  • freshly ground black pepper to taste

  • ½ cup grated Parmesan cheese


    Stir together mayonnaise, parmigiana cheese, garlic, rosemary, salt, and black pepper in a bowl.

    Grease baking dish with cooking spray.

    Lay chicken in dish.

    Spread mayonnaise mixture over chicken; top with extra  Parmesan cheese.


    Bake in preheated oven to 375°.

    Bake  for 25 to

    30 minutes or until 

    an instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Applesauce and boiled potatoes for our side dashes.

Hot dogs, fried potatoes and beans



We don’t eat hotdogs very often, but when we do, I prefer them to be served with fried potatoes.


Simple but tasty meal you can serve as is or add a salad or rolls.  This will serve two!

4 all beef hot dogs Cut in small pieces
Two large potatoes, skinned, and cut in medium slices
Vegetable oil, salt, and pepper and onion powder.

Baked beans cook separately 

In a large pan place a little vegetable oil. When oil is heated, add washed and skin potatoes, Salt, pepper and onion powder. You can use fresh onion, if desired, sliced thin.

Fry potatoes to brown on one side, flip and fry on the other side add hotdog pieces and cook until potatoes are tender.
Serve with baked beans a  simple but pretty good meal we enjoy it once and a while.

Cranberry pork tenderloin

I figured today was a good day to make something new.






I had a small pork tenderloin, fresh and jelled cranberries so today it’ll be Cranberry garnished Pork tenderloin.
TOPPING;

1/2 cup fresh cranberries washed 
1/2 cup jellied cranberry sauce 
3 tsp. Brown sugar 

Place above in microwave bowl.  Covered slightly.  I use my microwave cover for my bowl.  It has vents.  Microwave for 30 seconds two times. Remove and stir well
And set aside.

I small Pork tenderloin ( there are only two of us and I didn’t want leftovers).
Preheat oven to 400°.  Season pork with generous amount of salt, pepper and olive oil. *Bake uncovered.

Place in baking dish and bake*(uncovered) approximately 40 to 45 (depending on size)minutes.  Could be less. Don't over bake.  Remove from oven.  Cover tenderloin with above mixture. Bake an additional 10 minutes.

Side dishes to be determined!

Rotisserie chicken patties

Recipe for 3 small patties.  Adjust ingredients for larger amounts. My creation.

Rotisserie chicken is so good to make quick meals!!!

1cup shredded and pulsed rotisserie chicken
I egg
1 tsp. Dried parsley
1/2 tsp. Garlic powder 
1/2 tsp. Onion powder
1 T panko breadcrumbs 
Salt and pepper
Extra virgin olive oil

Mix together all ingredients but olive oil.

In a small to medium skillet add olive oil.  When olive oil has heated add patties.  Fry until browned on each side.

Top with marinara and Pecorino and cover until marinara is warm.

Feel free to add mozzarella cheese if you like.


Note:I BET THEY'D MAKE A GREAT SANDWICH  on A CRUSTY ROLL!!!
