Stuffed French toast with custard


Dinner tonight
*****Heads up!  Make custard / pudding ahead of time to thicken and be cold.






Note:  you can use instant vanilla pudding as well for a short cut.


3 eggs 
2cups whole milk( you can use 2% milk 
1tsp. Vanilla extract 
4 Tablespoons maple syrup 
2 tsp. Cinnamon 

Whisk all ingredient's together well.

About 6 slices bread 

In a skillet or grill
Pan place about 2 tablespoons butter and melt on medium heat.

With a large fork dip bread on both sides in egg mixture
And place in pan.  Brown each side and place on a platter.( cover with foil until ready to assemble sandwich.

Note: Make custard or use vanilla instant pudding.  Refrigerate until ready to make a sandwich type French toast.

Instructions:

Place one slice of French toast on plate then add custard in center. Top with another slice of French toast. Push down slightly and top with fresh berries and either fresh whipped cream or cool whip.

Custard recipe 



Microwave Custard Filling:
1/4 cup corn starch
1/3 cup sugar
2 cups milk( I used 2%)Or whole Milk is the best.
2 Egg yolks
2 Tablespoons butter
1 tsp. vanilla

In a medium glass bowl combine corn starch and sugar.  With a whisk , gradually stir milk into the corn starch.

Place above milk, cornstarch, sugar mixture in microwave on high power for 5 to 7 minutes or until thickened and bubbling, stirring after each 2 minute interval.  

Take out of microwave using whisk gently whisk half of the hot milk mixture into the egg yolks and then add the rest of the egg mixture into remaining hot mixture..

Microwave on high power for 1 1/2 to 2  1/2 minutes or until thickened and heated through, stirring after each 45 second interval.  Using a wire whisk blend in butter and vanilla. Cool before
