Air Fryer Vegetable Egg Rolls

This is a first for me.  

1/2 package cole slaw mix
1/4 cup soy sauce
2 cloves minced garlic
1/2 tsp. Onion powder
Vegetable oil
1/2 cup cooked shredded chicken
1 package refrigerated egg rolls ( I used 6) and froze the remainder.

Sauté above ingredients ( not egg rolls)in a small amount of vegetable oil.   Set aside.

This recipe made 6 vegetable rolls 













  • Lay one egg roll wrapper with point towards you
  • Fill with 3 tbsp of mixture
  • Fold bottom point up over filling and roll once
  • Fold in right and left points

    Place the egg rolls into the greased basket
  • Spray egg rolls with oil or brush with vegetable oil.
    Cook at 390 degrees for 8-10 minutes, turning half way through.
  • I Served them with a sweet Thai chili sauce

    Delish!

Air Fryer Wonton Ravioli


If you want a great appetizer with an Italian flair you must try these.




1 pkg.  Wonton wraps
1/2 lb.  Italian meat ravioli filling
Jar marinara sauce
Pecorino Romano or Parmigiana cheese grated 



This idea came on me by chance.  I was going to make a package of wonton wrap filled ravioli and about 12 did not seal well so I knew I didn’t want to waste them but also knew I couldn’t boil either.

Bingo!  I got out my air fryer and spray the bottom of it with cooking spray and placed them in my air fryer that I warmed to 380°.  I placed all of them not touching each other and watched them every 3 minutes to see if they browned.  Note( make sure to check frequently but once they are browned slightly remove them from air fryer),

Top with marinara and a little Pecorino and omg they are delicious.


this recipe is for about 50 ravioli or stuffed shells.  Cut the recipe in 1/3 for this appetizer.

Note:  you can make the whole recipe and it will freeze nicely for appetizers another time or stuffed meat shells.
Ingredients:

Note:  Great filling for stuff ing large shells as well.



1 1/2 lb ground beef, pork and veal(meatloaf mix) or any other combination
1 tsp. salt
pinch of pepper
1 small onion grated
 1 clove garlic minced optional
2 tablespoons canola or olive oil 
1 egg beaten
1 pkg. 10 oz. chopped spinach(drained well)
1/2 c. breadcrumbs
2/3 c. grated cheese(Romano, Pecorino Romano)

Cook meat mixture with finely chopped or grated onion, salt and pepper and minced garlic in oil until lightly browned. Breaking up with spoon while it cooks into small pieces. 

While meat is cooking in a separate pot bring 1 pkg. chopped spinach to a boil separating while cooking..  

Take off burner and drain thoroughly squeezing all water out.

After draining spinach add to meat mixture and stir until spinach is blended thorough..

Take off heat and add beaten egg, breadcrumbs and grated cheese(don't skimp on cheese) making sure to coat all of meat.

Place in bowl and let cool.  After cooling cover tightly and refrigerate until ready to use.  

You can make mixture several days in advance.  Cook shells according to package directions fill and cover with red sauce and bake covered at 350 degrees for approximately 30 to 40 minutes depending on your oven. 

 Remove covering and bake an additional 10 minutes or until cheese is melted and sauce is bubbling.

Air fryer coconut chicken cutlets

Coconut chicken for lunch and a side salad.

When I went grocery shopping I bought a large package of frozen individual chicken breasts.  They are super handy for our meals.  Last night we had 3(they ere a good size and I was able to filet them).  I served the coconut chicken with brown butter gnocchi and a cucumber/tomato salad. 

You can also prep them earlier in the day or the day before and use when needed in the refrigerator.   If I’m making several and I have extra I’ll freeze the cutlets for later meals.

About 1 lb. boneless skinless chicken breasts
1/2 cup Panko bread crumbs
1/2 cup sweetened coconut 
1 egg beaten with 1 tsp. Water
1/2 cup flour 
Pinch salt and pepper
2 scallions cut thin
Cooking spray

You’ll need 3 bowls.  One: Place panko bread crumbs and scallions in a bowl.  Two: eggs water, salt and pepper.  Three flour.  Dip chicken in eggs, then flour and then into coconut scallion mix.  Pat well into coconut.. so it sticks well.

Set Air Fryer on 365 or 370 degrees.  Spray basket with cooking spray.  Also spray chicken on both sides with olive oil or cooking spray.

Place chicken in basket 2 or 3 fillets fit in my basket depending on size of chicken breasts.  


Air fry 7 minutes and turn chicken and spray chicken again for approximately another 7 minutes.  

Air fryer cooking and having moist chicken requires patience to not overcook.  I make Pork chops in my air fryer and they are moist and juicy too.  Note:  I find a thicker piece of chicken or pork chop works the best to keep inside moist!

Air Fryer pork chops

I love using my air fryer.  It’s convenient for so many meats.

Today it’s center cut pork for the second time an easy quick recipe. Mine had a little fat on ends which really made them extra tender.

Note: If you use thinner pork chops they will cook very quick so watch time.  Personally a little thicker chop is the way to go.

2 -1/2 inch pork chops **without bone
Olive oil
Salt and pepper.

Generously coat pork with olive oil, salt and pepper.  I have used other spices so you season to your liking.  Note: I have used lemon and pepper seasoning too.

Turn air fryer on 365 or 370 degrees depending on your air fryer.

I used 370 degree temperature for 15 minutes turning chops at 7 minutes and added a few drops more of olive oil.

Moist and super tender.  Thumbs up!



While the pork was cooking I sliced in half small white potatoes, seasoned with olive oil, salt pepper , onion and garlic powder.  Baked 425 25 minutes.

Green beans with butter as a side

Air fryer stuffed French toast

I’m really enjoying my air fryer.  I use it several times a week.

It’s not an exact science with recipes in my opinion .  I have learned as I go along.

My air fryer gave me some suggestions on temperature but no exact temperatures and times.

Check out your Air fryer temperatures and be careful checking every so many minutes for color.  You don’t want to overcook.






2 eggs
1 tsp.. Vanilla extract
1 1/2  cups milk( you may need more)
1/2 tsp. Cinnamon or more
Whisk above ingredients

Approximately 6 slices bread
Should make 3 French toast sandwiches


Filling
3 T soft cream cheese
2 tsp. blueberry jam (or jam of choice)
Mix together


SUGGESTIONS:  spray basket with cooking spray before adding French toast sandwich for easy clean up!

Turn air fryer on.  Set temperature to 385 or temperature your air fryer suggests. Allowing it to warm helps before adding item.

Spray basket with cooking spray.

Place French toast sandwich in fryer.  Approximately 6 minutes.  Half way turn French toast sandwich to other side.  Check for golden brown color.  Serve with maple syrup or plain with powdered sugar sprinkle.

Air Fryer stuffed chicken breasts




I'm still learning how to cook in my airfryer.  Most of it has been guessing temperatures.  In my air fryer instructions there wasn't any absolute frying degrees but hints of temperature to cook meat, chicken etc. so this was relatively simple.  My chicken was a little dry after it was cooked so I will watch it carefully next time.  Twenty minutes may be enough.  I did drizzle the breasts after they were cooked with my homemade white sauce.  I'm sure you can top it with salsa or even a cheese sauce.  You decide.


Air fryer boneless skinless chicken breasts

2 large boneless skinless chicken breasts
salt and pepper to taste
paprika
garlic powder
onion powder
olive oil or cooking spray
a little flour 

Mix dry ingredients.  Stuff chicken breasts with Stove top stuffing or broccoli and cheese mixture. Dip both sides in dry ingredients after inserting toothpicks to hold ingredients. Spray or coat with olive oil.

  I needed 5 toothpicks for each chicken breast.  Be careful to not overstuff.





  • Place the chicken breasts inside the air fryer basket. Set the temperature to 360 degrees (or as close to that as yours allows) and set it for 25 minutes. 

    Press "start."

    At the halfway point, open the air fryer and turn the breasts over to the other side and resume cooking.

    Salmon cakes—New recipe Air fryer

    Air fryer recipe for Salmon cakes.



    The below recipe I didn’t add bacon to because (I )one didn’t have any bacon and (2)two I thought I’d eliminate some fat calories.  Having said that I think the bacon would have given it much more flavor.

    We chose to top our salmon cakes with the below toppings.

    We did enjoy the salmon cakes but added a topping after removing from air fryer.

    Air fryer Setting 380 degrees.. 15 minutes.

    **It was suggested to fry them in vegetable oil so you can or like  me use your Air fryer .












    Ingredients


    2 strips bacon, cooked until crispy, crumbled, bacon fat reserved
    **1/4 cup chopped onion ( I did not fry the onions )
    1 egg
    1/2 cup mayonnaise
    2 teaspoons Dijon mustard
    1/2 teaspoon sugar
    1/2 lemon, zested
    1 (14-ounce) can wild salmon, checked for large bones
    1 baked or boiled russet potato, peeled, and fluffed with a fork
    1/4 cup bread crumbs
    2 tablespoons grated Parmesan
    Freshly ground black pepper
    1/2 cup vegetable oil

    Add 1 tablespoon of the reserved bacon fat in a small saute pan over low heat. Add the onions and cook until translucent. Cool the onions for a bit.



    1. Mix the bacon, onion, egg, mayonnaise, mustard, sugar, and lemon zest in a bowl. Add the salmon and potato, mixing gently after each addition. Form the mixture into 12 small patties. In a shallow dish, combine the bread crumbs, Parmesan, and pepper, to taste. Coat the patties in the bread crumb topping. Heat 1/4 cup of the oil in a large saute pan over medium heat, and cook the salmon cakes in batches until golden, about 3 to 4 minutes per side. Add more oil, as necessary. Arrange on a serving platter and serve.

    Air fryer chicken

    The recipe below is basically how I made this chicken.

    It was a good example but I used what I had.  I sliced in strips 2 chicken  breasts.

    Made my own seasoned bread crumbs with Salt, pepper, paprika, parsley, onion and garlic powder.  I prefer mine over store bought seasoned bread crumbs. Dipped in egg and then breadcrumbs shaking off extra crumbs before placing in fryer.

      Note:  only use a spray mist on food that goes in your fryer. Other can cause a residue.

    I have found that air fryer timing isn’t an exact science so I check every several minutes.  Chicken cooks quicker than meat so don’t overcook!







  • 12 chicken tenders (1 1/4 lbs)
  • 2 large eggsbeaten
  • 1 teaspoon kosher salt
  • black pepperto taste
  • 1/2 cup seasoned breadcrumbs*
  • 1/2 cup seasoned panko*
  • olive oil spray
  • lemon wedgesfor serving


  • Season chicken with salt and pepper.
  • Place egg in a shallow bowl. In a second shallow bowl, combine the bread crumbs and panko.
  • Dip chicken in the egg, then into the breadcrumb mixture and shake off excess and place on a large dish or cutting board. Spray both sides of the chicken generously with oil.
  • Spray both sides of the chicken generously with oil.
  • Preheat air fryer to 400F.
  • In batches, cook the chicken 5 to 6 minutes on each side, turning halfway, until the chicken is cooked through and crispy and golden on the outside. Serve with lemon wedges.

    Air fryer boneless pork chops


    Today was my Second time using my air fryer.  The first was making home cut fries in it.  It took a little bit of adjustment to get the correct temperature but they turned out pretty good.  I’ll be working on getting them to brown better but all in all I like this particular air fryer.

    This fryer( insignia brand) seems to be perfect for my hubby and I.  It’s the smaller   Size.  Great for us!(2)


    Recipe below.  All approximate amounts.

    2 Boneless medium thickness pork chops.  

    In a small bowl I added sage, rosemary, paprika, salt, pepper, thyme and garlic powder. ( I didn’t measure)

    After misting the pork with olive oil I  Seasoned the pork on both sides with the above mix rubbing it in slightly with my fingers.

    360 degrees approximately 16 minutes. 

    I complemented the pork with  Garlic red skinned potatoes , cole slaw and baked beans. 

     I think depending on size of pork chops and your air fryer instructions it could air fry 2 or 3 pork chops in the 16 to 20 minute range. I used a 370 degree temperature.

    My air fryer would fry 3 pork chops comfortably.  Mine is a perfect size for two.

    Read your air fryer instructions and look on Pinterest or google for recipes.





    Moist, tender and flavorful.
