Chicken cutlets with a lemon butter sauce










Approximately 3/4 lb. Boneless chicken breasts,1 egg, 
salt and pepper and a little water.


In a medium skillet place about 5 tablespoons of olive oil and 1 Tablespoon butter. Dip chicken into egg and then into seasoned breadcrumbs. ( I use garlic and onion powder,parsley).

****Brown each side of chicken breast in oil/ butter .
And remove from pan.

While pan is still hot add about 1/2 cup chicken broth , lemon juice and a little flour.  Keep stirring liquid. It will thicken slightly.

 NOTE;
Add about 2 tablespoons lemon juice and slowly add some flour making sure to whisk while it is cooking. ( you may need to add a little more chicken broth), drizzle over chicken and serve..,

Season egg with above seasoning to your taste. Whisk well.

Plain breadcrumbs which I season to our taste.

Dip chicken in seasoned egg and then into seasoned breadcrumbs.
