I created this meal for my grandson's. They love my Italian stuffing and although the only meat that is involved in this meal is my Italian Meat sauce. (you can use jarred or marinara easily)
Three active boys with very different tastes love stuffing(ya know the kind you put in your turkey). Knowing that I could please all three I decided to make these easy bread and cheese dumplings. (this is what I chose to call them) They are hungry all the time and with 3 appetite's that are varying their Mom gets so frustrated.
Here's the recipe and Poppy transported it to them. What a guy! Mom was working so she added a salad and broccoli (yes the little one likes broccoli), some bread and when she called they all said Yummy. Not exactly. They said the loved them!! p.s. Poppy stopped and bought doughnuts for dessert!! Only kids can consume all those calories and not feel guilty!! Enjoy!!

Here is my approximate recipe. I slipped up and didn't measure exact amounts.
1 loaf Italian style bread
1/2 to 3/4 cup milk (I used skim)
1 medium onion chopped
1 large stalk celery chopped
5 T. Butter
1 tsp. salt
1 egg beaten
1/2 tsp. pepper
2 cups or 1 jar pasta sauce
1/2 to 3/4 cup Pecorino Romano cheese grated (Note: If you love cheese add more)
handful shredded mozzarella
In a small pan saute onion, celery with butter slowly. When translucent set aside to cool slightly.
In a large bowl tear bread into medium size pieces. Add Italian grated cheese. Whisk egg with milk and add to bread along with salt and onion mixture. Mix with hands thoroughly to blend. Set aside for a few minutes so ingredients can distribute through for the best flavor.
Set oven to 350 degrees. Spray with cooking oil cookie sheet. Make large dumpling size balls and place on cookie sheet. Bake approximately 10 to 15 minutes.
In a baking dish place approximated 1 cup sauce. Place baked dumplings and add another cup of sauce or enough to cover top. Top with shredded mozzarella cover and bake at 350 until sauce is warmed and mozzarella is melted. Approximated 15 minutes to 1/2 hour depending on sauce temperature. (Jarred or sauce in frige takes longer to heat).
