Baked oatmeal reduced calories


This recipe is similar to my recipe I posted some years ago.  I decided to try cutting back on amounts and using substitutions for some ingredients.  I will note Changes with an *.


2 cups gluten free oatmeal( it’s all I had)*
2 eggs
4 T melted butter*
4oz. Unsweetened applesauce*
2 cups milk( 2%)*
I tsp. Vanilla extract
1 1/4 tsp. Baking powder*
Pinch salt
4 T brown sugar*( you can use Splenda)

Fresh berries of choice.
Cinnamon optional

Spray baking dish.  My baking dish was 10x6 x2
Note:  I knew this baking dish would work.  You can use whatever size but if the dish is too large it will bake quicker and imo not be as fluffy.

Place eggs, cooled melted butter , applesauce, vanilla , brown sugar, salt and milk in a deep bowl and whisk until blended.  Add dried oatmeal and mix until all oatmeal is wet.

Spray pan with cooking spray. Slowly pour oatmeal mixture into pan. Sprinkle with cinnamon if desired.

Bake Uncovered 375 for approximately 25 minutes.  Remove from oven spoon Or cut into squares and serve with a little milk and berries or just berries as I did.

Another Cherry tart


Creamy and custard like this cherry tart is not very sweet. It’s actually perfect!  Most of the sweet comes from the crust.




Crust

1/2 cup melted butter
1/2 cup  sugar
1 and 1/4 cup flour
Pinch salt
2 T almond meal (ground almonds)

Mix melted butter, sugar and flour together. Work together with a wooden spoon or use your hands. Into a ball.  This is an easy crust.  No rolling necessary,  place in pan in pieces of dough and press up side of springform pan about 1/4 inch and press on bottom too.  Bake 350 degrees 15 to 18 minutes. Remove from oven and sprinkle almond meal over warm crust.  Place cherries into crust slightly.

Note: I used a springform pan.






Filling
3/4 cup heavy whipping cream(unbeaten)
2 eggs room temperature
1tsp vanilla extract
3 T sugar
2 T all purpose flour
1lb. Pitted cherries

Place eggs ,vanilla , sugar and heavy cream in bowl.  Whisk together.  Add flour whisking until blended.

Slowly pour over cherries.



Place in 350 degree oven and bake 50 to 60 minutes. Do not over bake.  It’ll jiggle a little when removing from oven.



COOL COMPLETELY BEFORE CUTTING
NOTE:  you can sprinkle powdered sugar or extra cherries after slicing if desired.

Ham salad

Everyone’s ham salad.

Whether you use ham(from your leftover Easter dinner) or Bologna this is definitely an old favorite of my family.

I’ll bet there are some who remember it made in their home too!  My family called it Monkey Meat!


2 cups ham cut in cubes
Pickle relish or sweet pickles chopped ( several tablespoons)
1/2 cup Mayonnaise
1/2 cup Miracle whip

Place ham and pickles or pickle relish in food processor.  Pulse a few times.  Do not over process. Add mayo and miracle whip With a large spoon and mix together.  If it’s just one of the condiments that’s fine.

Mine happens to be a mixture of the two!

Serve with crackers, bread or rolls.

Orange Supreme Bunt Cake!

Easy to do and orange flavoring is one of my mom's favorite so you guessed it I'm making a whole cake for her and bringing it when I visit.

Note to self:  Don't tell Mom it is a box mix.  She's a scratch cake lady!!!!

Drain oranges well before gently tossing them through the batter.

Of course I had to taste it!! Very moist and yummy!




1 Duncan Hines Orange cake mix and followed package directions
1 -11 oz. can Mandarin oranges drained

I baked the above (350) in a well greased and floured Bunt pan according to box directions.  Let cool for approximated 10 minutes and turn onto baking rack.  Let cool completely.  Transfer to serving platter and frost with butter cream frosting.

1 box confectionery sugar
2 T. softened butter or more
juice and *rind of one orange (I grated the rind on top of the icing for a little more color)
add milk a little at a time to desired consistency
1 cup coconut
food coloring for orange color
(1 drop red, 2 drops yellow)

Hot chicken sandwiches

When I was growing up Monday was soup day.  Mom did laundry and before she started the laundry she’d put on a pot of soup.  I had 2 large split Bone-in Chicken breasts , celery, onion and carrots so Instead of noodles I decided it would be a good day to make hot chicken sandwiches.


I + lb. bone-in chicken breasts
3 carrots
Small onion
Celery stalks
Salt

6 to 8 cups cold water.

Place all ingredients in crockpot and cook on low 6 To 8 hours


Remove chicken and cool.  Shred chicken.

Strain soup removing carrots.  Discard bones etc.

Reserve 4 cups chicken broth

Place 4 cups chicken broth in medium size pan.  Place 1/2 cup flour in a bowl.  Whisk 1/2 cup broth Into flour.  Slowly add mixture to pan .  Turn heat to medium and continue to stir until thickened.  Add shredded chicken and stir.  Serve over bread or rice or both.  Vegetable of choice.
