Nectarine Glaze Pie

I had some nectarines on my counter and they were getting ripe fast so I figured I had better get to work and make something.  I looked and looked and remembered mom had made strawberry pie and made a glaze. I decided to substitute the nectarines instead of the strawberries and it worked out well...I used a pre made pie crust..(Just had to roll it out and bake in my pie pan)and it was very easy.  Happy Baking!





2 cups sliced nectarines
3 tablespoons cornstarch
1/2 cup water
1/2 cup sugar
1 prepared pie shell (bake according to directions or use a pre made pie shell)
Approximate 6 to 8 nectarines.( you can leave skin on if you like).
2 tablespoons butter(optional)

Combine 1 cup sliced nectarines and sugar

   Stir cornstarch with water until blended , add nectarine mixture. ...

Place mixture in microwave safe dish 

Microwave on high at  2 minutes intervals, stirring constantly..Check and put back in microwave until it thickens about 1 1/2 minutes or more..Take out and add remainder of nectarines(1 cup) to mix and stir in butter(optional) . 

 Cool completely and place in cooled pie shell..Refrigerate for a few hours..Top with homemade whipping cream.. 

Delicious!  Suggestion: Remove skins off nectarines

Easy saute'd cabbage and noodles!

I'm from the old school of baking and cooking and usually take the long way to make most meals but lately I have been thinking new school and taking some short cuts to recipes.  I have found that most of these short cuts work very well and with the busy lifestyle that most of us have so why not make it easier.



Here is a very simple way to make some Haluski or cabbage and noodles:

I pkg. preshredded cabbage(I usually rinse all pre packaged veggie products) Drain well.

1 medium to **large onion sliced thin (onion gives it a great flavor along with
1  to 1/2 sticks butter

salt and pepper

l lb. thin or thick noodles (you choose) Cook according to directions.  

Saute' onion in butter.  Add drained cabbage. Cook slowly stirring to coat all with butter. (Cover for a while to let cabbage steam)

****In a separate pot, add a bit of salt.  When water is to a boil add noodles and cook according to directions. Drain well and add to cooked cabbage..

Enjoy!  Easy, quick and so buttery!

Try these Watermelon Treats! Cool and refreshing!

 I had posted this easy treat originally at Christmas because I just happened to have these Christmas Tree molds.  Today I am reposting for easy summer treats for the kiddo's or anyone who loves watermelon.  Double click on the highlighted underlined Watermelon Ice Cream for the easy recipe.

There are lots of uses for watermelon, one being slice it up cold from the refrigerator.

Also you can scoop it, cut in pieces and add to a fruit salad.

There are watermelon coolers and watermelon frostees and various watermelon cocktails but my favorite is Watermelon Ice Cream.  Note:  Maybe next time I'll try this easy recipe with some frozen vanilla yogurt to make it with less fat.

Today mine are watermelon ice cream Christmas trees.  A nice idea for some Christmas treat.(I didn't have any other molds so I thought I'd use these).  You can easily place all in a deep freezer friendly container and scoop some out with a ice cream scooper. (Allow container soften for several minutes before scooping).  Easy to make and all you need to do to remove them is place the mold bottom in lukewarm to cold water and they easily release to serve. I managed to snag this Christmas tree mold made by Wilton, new and still in its original packaging an couldn't resist trying it out.


 Here's some pictures.  Why not try making some watermelon ice or ice cream in a mold, 13 x9 inch pan or whatever your little (big) heart desires.
