Strawberry Delight ! Easy to make and a nice holiday dessert


Here is a recipe that I found that I made long ago and one of my daughter's favorites.  Easy and great to make around the holiday season instead of cookies..You make this in a cookie sheet so you can get a lot of servings with this recipe..If you are looking for a dessert that reminds you of a cream pie..You may like this.  . Here it is:

It's called Strawberry Delight (It is delightful)

Topping:

2 cans Strawberry Pie filling for topping

1 box confectionery sugar
2 - 8 oz. cream cheese softened
1 large container Cool Whip

Using a hand held or upright mixer beat cream cheese and powdered sugar until well blended..Fold in Cool Whip..Set aside..


Crust:

2 cups flour
2 tablespoons sugar
1 stick margarine softened


Mix sugar and margarine until blended,  add flour and mix well.  Mixture will have the texture of a  pie crust..  I found that placing the mixture in either a small cookie sheet or a 13 x9 inch baking pan, pressing the crumbled mix on the bottom works fine...(Bake 375 degrees 15 to 20 minutes until lightly browned..Cool  Note:  Make crust first so it can cool..





Steps to a great dessert!

Step 1. Make crust..Cool


Step 2 . When crust is cooled..Place Confectionery sugar/cream cheese,cool whip mix on top


Step 3..  Top with Strawberry, Blueberry, Apple pie filling.  Refrigerate until ready to be served..11/29/11

Asian Fried Rice with beef!

I wanted to start the New Year off right and this meal appealed to me and I think my hubby will like it too! Unfortunately I forgot to take a few photos so this is the recipe.

 Using some thinly sliced sirloin or top round steak(about 1/2 lb.) I seasoned it with about 2 tablespoons reduced sodium soy sauce.

 


Heat 2 tablespoons canola oil

Place steak in canola oil and cook until browned

Add 1 bag frozen stir fry or Asian vegetable mix

1 pouch frozen brown rice( microwave according to directions)
1 tablespoon ginger
2 tsp. minced garlic
1 or 2 sliced scallions
1/4 cup chopped dry roasted peanuts.



After steak is browned..transfer to dish and set aside. Add vegetables to juices and stir fry until vegetables are tender..Cook rice according to directions. Add ginger and garlic. Stir fry for several minutes. Add steak, rice, scallions and peanuts. Stir fry until heated through..
