Yesterday I had made the stuffed tomatoes with sausage and I had some leftover un cooked sausage so I added some diced scallion, diced red pepper, parsley and olive oil to it and saute all until sausage was browned slightly, then sprayed a 9 inch baking dish (mine was a quiche pan), placed sausage mixture in dish and topped with Betty Crocker Corn Muffin mix,(mixed according to directions) sprinkled some grated cheddar cheese and garnished with chopped chives..Nice Saturday breakfast or brunch..Enjoy! ¾ cup cooked sausage (I used Italian sweet but I think any flavor would work)
¼ chopped green or red pepper
1 tsp. parsley
2 chopped scallions
2 tablespoons olive oil
1 pkg. Betty Crocker cornbread/ muffin mix(follow directions for cornbread)
¼ cup sharp cheddar cheese shredded
1 tablespoon chives(optional for top
Heat oven to 400 degrees. Spray
9 inch baking dish with cooking spray. In a separate pan sauté first 5 ingredients, spoon into baking dish. Top sausage mixture with 5 or 6 tablespoons cornbread mix. Sprinkle with cheese and chives. Bake approximately 15 minutes.. Serve hot! with fruit on the side.
